Rainy's Peanut Butter Woof Biscuits


1/4 cup natural peanut butter (Laura Scudder or Adams)
1 T veggie oil
1 cup water
2 1/4 cup of whole wheat flour
1 cup of oatmeal

Preheat oven to 375

Combine peanut butter, oil and water in a large bowl. Stir in the whole wheat flour gradually. Then add the oatmeal stir to combine. Roll the dough to a 1/4" thickness and cut with a dog bone cookie cutter. Place on an ungreased cookie sheet.

This dough is really great. You can keep rerolling it and it dosen't dry out.

Bake for 35 minutes.

The dough does not spread when baking.

Quick Turkey Dinner

Turkey Cutlets: I usually season them with freshly ground black pepper, garlic powder, thyme and a drizzle of olive oil. Saute until done.

The Basic Stuffin' Cassserole I added 1 can of pineapple chunks with juice and chicken stock.
Mashed Potatoes and of course Cranberry Sauce and Gravy.
The gravy was from Trader Joe's Turkey Gravy and I added a little Kitchen Bouquet for some extra color.

(for the stuffing you can use 1 bag and half the ingredients)

Taquitos with Avocado Sauce

Either make or buy you taquitos.

Taquitos
Use shredded beef or shredded chicken. Cook a roast in a crock pot with some garlic and onion. And season to taste. Roll your meat in a corn tortilla and secure with a toothpick so they look like a cigar. Fry in oil until brown.
The tortillas should be soft if a little stiff just microwave for about 30 sec. or until soft.
I found that they need to be cooked right away or the tortilla will get stiff and start to tear. 

Avocado Sauce/Salsa
1 avocado
1/4 onion
1 jalapeno pepper
1/4 C cilantro chopped
1 T vegetable oil
blend or mash together

This is the recipe that someone at El Pollo Loco in Sacramento gave me
amounts are approximate but he said they start out with guacamole and add the rest of the ingredients.

FYI: did you know that a avocado is also known as an alligator pear!
