potato salad #2 (brinks style)

brinks was a deli at la cumbre plaza in santa barbara many years ago. they had the best sandwiches and deli salads. they had a unique way of assembling the sandwiches they would cut the rolls in thirds. (roll-meat and cheese-center of roll-meat and cheese and bottom of roll) and they use to mix mustard and mayo together for a spread on the sandwiches it was delicious and i occasionally do the same thing when i make a sandwich. it really does taste good because it’s mixed together and is very creamy. i remember one of my favorites was salami, swiss on a onion roll. my other favorite was turkey that they baked with swiss on a french roll. A viors french roll nothing like it and sadly viors no longer exists in santa barbara.
red potato..... boil potatoes until tender.....cool....dice
bacon cook....drain....dice
bell pepper.....dice
red onion....dice
mix all ingredients together with mayo.....chill
a very tasty and different potato salad
enjoy.....

  1. Libby! I lived in Santa Barbara (Hope ranch)in the 70's, and regularly feasted on Brinks potato sald, which I still think is the best I ever had. I googled "potato salad brinks santa barbara" and came across your fun blog.

    HOWEVER, the recipe you give for Brink's tater sald is not at all what I remember. I don't recall bacon or bell pepper. Could there have been different types of potato salad there?

    What I remember (and memory can be so faulty) was just potatoes, half of them mashed, and half cubed, perhaps some celery and a bit of mild onion, plenty of mayo, and a spice - some herb that gave it a very distinctive and unique taste, but which I never could identify (celery salt? or something similar? - and that was it. Years later I thought I'd go there and beg for the recipe, but found out it was long-closed. Damn!

    Brinks had 2 types of potato salad the one you described is the original one. I'm making it tonight. Yes it was plain as far as ingredients but tasted so wonderful. I think the missing ingredient is celery seed. And remember the macaroni salad that was so great. I have duplicated that salad. I'll post the recipe.

    And guess what..... I lived on Nogal Dr. across from the riding stables and went to Vieja Valley, La Colina and San Marcos.

    Small world.

    i too was looking for the original Brink's potato salad recipe. I lived on corner of Las Palmas and Via Presada. Went to Vieja Valley and La Colina, too.

    Sadly moved away in 1976.
